Ingredients:
400g fresh tomatoes
1 onion
2 jalapeños/chillis
1 clove of garlic
A splash of lime or lemon juice
Coriander
Salt
Method:
Dice the tomatoes and garlic and finely as you can and add them to a large bowl. If using large tomatoes you will want to remove the core.
Crush a clove of garlic into the bowl.
Decide how spicy you want your salsa and again very finely chop the chillis. Add them to the bowl.
Chop some fresh coriander, add to the bowl.
Season with a splash of lime or lemon juice and some salt.
Mix everything together. This can be enjoyed fresh or stored in the fridge in a tub for a couple of days. It goes really well with other Mexican foods such as burritos, rice and beans, tortillas, etc. It also livens up salads and omelettes as a side.
