Greek Salad

Ingredients:
• ½ a red onion, diced
• 150g cherry tomatoes, halved
• ½ red pepper, cubed
• ½ a cucumber, cubed
• 100g feta, cubed
• 50g olives
• Fresh mint, roughly chopped
• 2 tbsp olive oil
• ½ lemon
• Salt and pepper
Method:
1. The key thing for this recipe is to cut the tomatoes, pepper, cucumber and feta into similar sized pieces so that you get a nice mix of everything when you eat it. So with that said, cut your red pepper into 2cm squares and your cucumber into quarters and then thickly slice. For the onion, dice it quite finely so you don’t get too much in a single mouthful.
2. This recipe is super simple – add the onion, tomatoes, red pepper, cucumber, feta and olives together in a bowl. Add a good amount of olive oil and season with the juice of half a lemon, salt, pepper and fresh mint.
3. This is delicious fresh enjoyed with pitta bread, tzatziki, grilled meats and veggies. It will store in the fridge for a few days too. You can also try swapping the feta for some grilled halloumi if you prefer.
