Super Veggie Chilli

Serves: 2

Cook: 45-60 mins

Ingredients:

  • 1 onion, diced

  • 2 cloves of garlic, crushed

  • 1tsp cumin seeds

  • 1tsp ground coriander

  • 1tsp chilli powder (optional)

  • 2 carrots, peeled and finely sliced

  • 200g mushrooms, sliced

  • 1 bell pepper, diced

  • 1 stick of celery, sliced

  • 400g tinned tomatoes

  • 400g tin of kidney beans

Method:

1. In a wide based pan, fry the onion in a little olive oil for a few minutes, then add the garlic and fry for a couple more minutes until everything is nice and soft.

2. Add the spices and fry for a few minutes to release the aroma.

3. Add the carrots and allow them to caramelise a little in the pan.

4. Add the mushrooms and peppers and allow them to wilt down a little.

5. Add the celery and tinned tomatoes and leave to simmer for 20 mins.

6. Add the kidney beans and warm through for a couple of minutes.

7. Serve with rice or jacket potatoes.
